Our selection of sushi combines superior-grade fish with precision handling. We procure our salmon from the well-oxygenated waters of Norwegian fjords and Scotland. These are delivered to our sushi restaurant on Neal Street every morning, on ice. The ASC certified prawns come in popular sushi boxes; itsu classics and health & happiness. Our fish ‘pros utilise their sashimi skills to cut, slice, and roll. They prepare each piece of sushi, sashimi, nigiri, and maki roll with subtle details only the expertly trained can add. 

As a Japanese restaurant dedicated to responsible sourcing, we scrutinise our supply chain. From petit pois grown in Belgium with recycled rainwater to chicken that comes from independently assured ethical British farms, we maintain our high standards across the board. Our authentic miso paste is made from herbs and spices in the Nagano Valley. The soy sauce has a 2000-year-old traditional recipe treasured by a Japanese family brewer. We steam our seasonal vegetables and signature dumplings - never fried.
