"Miso as a base of the soup not only adds a delicious umami flavour but is also one of my favourite ingredients in Asian cooking because of the associated health benefits. Miso is fermented soyabean, which makes is a probiotic ingredient. Probiotics foods may support and maintain a gut filled with healthy bacteria. When a probiotic is paired with other ingredients that are high in fibre (prebiotic) such as the variety of vegetables in the gyoza they work synergistically to promote good gut health."
